Make crispy zucchini fries in your air fryer with this easy recipe. Perfect for a healthy snack or side dish.

  • 2 medium zucchinis, ends trimmed
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. Cut zucchinis into 1/2-inch thick fry shapes.
  2. Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko, Parmesan, garlic powder, salt, and pepper mixed together.
  3. Dredge each zucchini fry first in flour, then dip in egg, and finally coat with the panko mixture.
  4. Arrange fries in a single layer in the air fryer basket. You may need to cook in batches.
  5. Lightly spray the fries with cooking spray.
  6. Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve immediately with your favorite dipping sauce.
