Make light, crispy zucchini fritters using your air fryer. This recipe provides simple steps for tender insides and a golden exterior without excess oil.

  • 1/2 cup all-purpose flour (or gluten-free blend)
  • 1 large egg, lightly beaten
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese (optional, omit for vegan)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray (oil-based)

Instructions

  1. Grate the zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel or several layers of paper towels. Squeeze out as much liquid as possible. This step is key for crispy fritters.
  2. In a medium bowl, combine the drained zucchini, flour, beaten egg, parsley, Parmesan cheese (if using), salt, pepper, and garlic powder. Mix until just combined. Do not overmix.
  3. Preheat your air fryer to 380°F (195°C). Lightly spray the air fryer basket with cooking spray.
  4. Form the mixture into small, flat patties, about 2 inches wide and 1/2 inch thick. You should get 8 to 10 fritters.
  5. Place the fritters in the air fryer basket in a single layer, ensuring they do not touch. You may need to cook in batches.
  6. Lightly spray the tops of the fritters with cooking spray.
  7. Air fry for 10 to 12 minutes, flipping them halfway through the cooking time. The fritters should be golden brown and crisp.
  8. Remove carefully and serve immediately with your favorite dipping sauce.

Notes

  • For the best texture, press the moisture out of the zucchini thoroughly. Excess water leads to soggy fritters.
  • If you want to make these vegan, substitute the egg with 1 tablespoon of ground flaxseed mixed with 3 tablespoons of water (let sit for 5 minutes to gel) or use a commercial egg replacer.
  • To add a spark, mix in 1/4 cup of shredded cheddar or feta cheese with the other ingredients.
  • These fritters are great for meal prep. Cool completely, then store in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F for 3-4 minutes to restore crispness.
