Instructions
In a medium bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
In a separate small bowl, whisk together the milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
Gently fold in the diced apples. The batter will be thick.
Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 350°F (175°C). Use a thermometer to monitor the temperature.
Carefully drop rounded tablespoons of batter into the hot oil, working in small batches to avoid crowding the pot.
