Create delicious, homemade apple fritters without the mess of deep frying. These baked fritters are tender, spiced with cinnamon, and finished with a tangy apple cider glaze for a perfect fall dessert or breakfast treat.

  • 2 large Granny Smith apples, peeled, cored, and finely diced
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted, plus more for greasing
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons apple cider
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.
  2. In a medium bowl, combine the diced apples with 1 tablespoon of the granulated sugar and 1/2 teaspoon of the cinnamon. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, remaining cinnamon, nutmeg, and salt.
  4. In a separate small bowl, whisk the remaining granulated sugar, egg, milk, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix the batter.
  6. Gently fold in the melted butter and the prepared apples until they are evenly distributed throughout the batter.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the fritters bake, prepare the glaze. In a small bowl, whisk together the powdered sugar, apple cider, and vanilla extract until smooth. Add more cider, a drop at a time, if the glaze is too thick.
  10. Remove the fritters from the oven and let them cool in the pan for 5 minutes.
  11. Transfer the warm fritters to a wire rack. Drizzle the apple cider glaze generously over the tops of the warm fritters.
  12. Allow the glaze to set slightly before serving. These are best enjoyed warm.

Notes

  • For a stronger apple flavor in the glaze, substitute 1 tablespoon of the apple cider with 1 teaspoon of concentrated apple cider reduction.
  • If you prefer a crispier exterior, you can lightly brush the tops of the fritters with melted butter before baking.
  • This recipe makes easy apple fritter bites if you use a mini muffin tin; reduce the baking time by about 3 to 5 minutes.
