  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 cup finely chopped apples (about 1 medium apple)
  • Butter or cooking spray, for greasing
  • Optional toppings: maple syrup, powdered sugar, whipped cream

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, cinnamon, nutmeg, and sugar.
  2. Make a well in the center of the dry ingredients and pour in the milk, egg, and melted butter. Mix until just combined; do not overmix.
  3. Gently fold in the chopped apples.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  6. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on the other side.
  7. Serve immediately with your favorite toppings.

Notes

  • For extra flavor, you can sauté the chopped apples in a little butter and cinnamon before adding them to the batter.
  • Ensure your griddle is hot enough to cook the pancakes through without burning.
