Easy bacon-wrapped jalapeño poppers stuffed with cream cheese and cheddar. A perfect make-ahead appetizer for any party.

  • 68 large jalapeños
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 68 slices bacon, cut in half

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the jalapeños in half lengthwise. Use a spoon to carefully remove the seeds and membranes. Wear gloves if you have sensitive skin.
  3. In a small bowl, mix together the softened cream cheese, shredded cheddar cheese, garlic powder, salt, and pepper until well combined.
  4. Spoon the cream cheese mixture into each jalapeño half.
  5. Wrap each stuffed jalapeño half with a piece of bacon. Secure with a toothpick if needed.
  6. Place the poppers on the prepared baking sheet.
  7. Bake for 20-25 minutes, or until the bacon is crispy and the jalapeños are tender. For crispier bacon, you can place them under the broiler for the last 1-2 minutes, watching carefully to prevent burning.
  8. Let cool slightly before serving.

Notes

  • For less spice, remove all seeds and membranes from the jalapeños.
  • To make ahead, prepare the poppers up to the baking step and refrigerate them on a baking sheet. Bake as directed, adding a few extra minutes to the cooking time.
  • To ensure crispy bacon, you can pre-cook the bacon slightly before wrapping the jalapeños, or bake at a higher temperature.
  • These can also be cooked in an air fryer at 375°F (190°C) for 12-15 minutes, flipping halfway through.
