Make this easy, crowd-pleasing bacon-wrapped shrimp appetizer using a foolproof broiler method for perfectly crispy bacon and juicy shrimp. The sweet and smoky honey-chipotle glaze adds incredible flavor.

  • 1 pound large shrimp (about 20-24), peeled and deveined
  • 1 pound thin-cut bacon, cut in half crosswise
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Glaze:
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chipotle powder (or more for extra heat)
  • 1 clove garlic, minced

Instructions

  1. Prepare the shrimp: Pat the shrimp completely dry using paper towels. This step helps the bacon crisp. Toss the dried shrimp with olive oil, salt, and pepper.
  2. Prepare the bacon wraps: Take one half-slice of bacon and wrap it tightly around the middle of one shrimp. Secure the bacon with a toothpick inserted through the bacon and shrimp. Repeat with all shrimp.
  3. Prepare the glaze: In a small bowl, whisk together the honey, soy sauce, apple cider vinegar, chipotle powder, and minced garlic until combined. Set aside half of the glaze for brushing later.
  4. Preheat the broiler: Position an oven rack about 6 inches from the heat source and preheat your broiler to high. Line a baking sheet with foil for easy cleanup, and place a wire rack on top of the foil.
  5. Arrange the shrimp: Place the bacon-wrapped shrimp on the wire rack, ensuring they are not touching.
  6. First broil: Brush the tops of the shrimp lightly with half of the reserved glaze mixture. Place the baking sheet under the broiler for 4 to 6 minutes, watching closely to prevent burning.
  7. Flip and finish: Carefully flip the shrimp. Brush the second side with the remaining glaze. Return to the broiler for another 3 to 5 minutes, or until the bacon is crisp and the shrimp is opaque and cooked through.
  8. Serve immediately: Remove the toothpicks before serving. Serve these sweet and savory shrimp bites warm with any extra glaze on the side for dipping.

Notes

  • For the crispiest bacon, use thin-cut bacon rather than thick-cut.
  • If you prefer baking over broiling, bake at 400°F (200°C) for 15-20 minutes, flipping halfway, and brush with glaze during the last 5 minutes of cooking.
  • You can make these ahead of time by wrapping the shrimp and storing them covered on the baking sheet in the refrigerator for up to 4 hours before cooking.
