  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Baileys Irish Cream liqueur
  • 1 cup heavy whipping cream
  • 1 package (3.9 ounces) instant chocolate pudding mix
  • 1 1/2 cups cold milk
  • 1 package (14.3 ounces) chocolate sandwich cookies (like Oreos), crushed
  • 1/2 cup chocolate chips, for garnish
  • Extra Baileys or chocolate syrup, for drizzling (optional)

Instructions

  1. Prepare the cookie layer: Crush the chocolate sandwich cookies until fine crumbs form. Set aside about 1/2 cup for the top layer. Place the remaining crumbs in the bottom of a large glass trifle bowl or individual serving glasses. Press them down lightly.
  2. Make the cheesecake layer: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Slowly beat in the 1/2 cup of Baileys Irish Cream until fully combined. Set this mixture aside.
  3. Prepare the pudding layer: In a separate bowl, whisk the instant chocolate pudding mix with the cold milk until the mixture thickens, about 2 minutes.
  4. Whip the cream: In a chilled bowl, beat the heavy whipping cream until stiff peaks form. Gently fold about one-third of the whipped cream into the chocolate pudding mixture to lighten it.
  5. Assemble the trifle: Spread half of the Baileys cheesecake mixture evenly over the cookie base. Top this with half of the lightened chocolate pudding mixture. Sprinkle with half of the reserved cookie crumbs.
  6. Repeat the layers: Add the remaining Baileys cheesecake mixture, followed by the remaining chocolate pudding mixture.
  7. Chill: Cover the trifle and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set firmly.
  8. Finish and serve: Before serving, top the trifle with the remaining crushed cookie crumbs and chocolate chips. Drizzle with extra Baileys or chocolate syrup if desired. Serve cold.
