2 lbs Yukon Gold potatoes, cut into 1-inch cubes
1 block (7 oz) good quality feta cheese, crumbled or cubed
1/4 cup olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt (use less if feta is very salty)
1/4 teaspoon black pepper
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a 9×13 inch baking dish.
In a large bowl, toss the cubed potatoes with the olive oil, minced garlic, oregano, thyme, salt, and pepper until the potatoes are evenly coated.
Spread the seasoned potatoes in a single layer in the prepared baking dish.
Bake for 30 minutes.
Remove the dish from the oven. Gently stir the potatoes and sprinkle the feta cheese evenly over the top.
Return the dish to the oven and bake for another 15 to 20 minutes, or until the potatoes are tender and the feta is slightly softened and lightly golden at the edges.
Remove from the oven, sprinkle with fresh parsley, and serve warm.
Notes
For extra flavor, you can roast the potatoes for 10 minutes before adding the feta.
If you prefer a creamier texture, gently mash some of the potatoes against the side of the dish after the final bake.
