A moist and flavorful baked oatmeal that holds its shape for easy grab-and-go breakfasts. Customize with your favorite fruits or chocolate chips.

  • 2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 large eggs
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1/3 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • Optional: 1 cup fresh or frozen berries, or 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, whisk together the rolled oats, flour, brown sugar, baking powder, salt, and cinnamon.
  3. In a separate medium bowl, whisk together the eggs, milk, melted butter or coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. If using, gently fold in the berries or chocolate chips.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  8. Let the baked oatmeal cool completely in the pan before cutting into squares. This is key to achieving a sliceable texture.

Notes

  • For a moister texture, you can add an extra tablespoon of milk or a mashed banana to the batter.
  • To prevent a rubbery texture, avoid overmixing the batter.
  • Baked oatmeal can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or toaster oven.
