4 medium sweet potatoes
1 tablespoon olive oil or melted butter

Instructions
Preheat your oven to 400°F (200°C).
Scrub the sweet potatoes well under running water to remove any dirt. Pat them completely dry with a paper towel.
Prick each sweet potato several times deeply all over with a fork. This allows steam to escape during baking.
Rub the exterior of each potato with olive oil or melted butter.
Sprinkle generously with salt and pepper.
Place the potatoes directly on the oven rack.
