Beer Braised Bratwurst

Learn how to make tender and flavorful bratwurst simmered in beer and onions, perfect for an Oktoberfest celebration or a hearty fall meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound bratwurst sausages
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (12 ounce) bottle lager or amber ale
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon caraway seeds
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Brown the bratwurst on all sides, about 5-7 minutes. Remove bratwurst from the skillet and set aside.
  3. Add the sliced onion to the skillet and cook until softened and lightly browned, about 8-10 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Pour in the beer, scraping up any browned bits from the bottom of the skillet.
  6. Stir in the Dijon mustard and caraway seeds.
  7. Return the bratwurst to the skillet. The liquid should come about halfway up the sides of the sausages. Add a little more beer or water if needed.
  8. Bring the liquid to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the bratwurst are cooked through and tender.
  9. Season with salt and pepper to taste.
  10. Serve the bratwurst with the braised onions and sauce.

Notes

  • For an extra layer of flavor, you can finish the bratwurst on a grill or under the broiler for a few minutes after braising to crisp up the casings.
  • Serve with your favorite mustard, sauerkraut, or mashed potatoes.
