Make these easy, high-protein egg bites at home. They are perfect for quick breakfasts, meal prepping for the week, or serving as a savory brunch item.

  • 1/2 cup cottage cheese
  • 1/4 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup shredded cheese (Monterey Jack or cheddar)
  • 1/2 cup cooked, crumbled sausage or bacon (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Lightly grease a standard 12-cup muffin tin.
  2. In a large bowl, whisk together the eggs, cottage cheese, milk, salt, pepper, and garlic powder until completely smooth. This step helps create a creamy texture.
  3. Stir in the shredded cheese and any cooked meat additions you are using.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 15 to 20 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.
  6. Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
  7. For meal prep, store cooled egg bites in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave when ready to eat.
