Discover the simple joy of making chewy, butterscotch-flavored blondies in just one bowl. These bars are a delightful alternative to brownies, perfect for any occasion.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
  2. In a large bowl, combine the melted butter and brown sugar. Stir until well combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate small bowl, whisk together the baking powder, salt, and flour.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  6. If using, fold in the chocolate chips or nuts.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  9. Let the blondies cool completely in the pan before cutting into squares.

Notes

  • For an extra rich flavor, use dark brown sugar.
  • You can substitute white chocolate chips, butterscotch chips, or dried fruit for the chocolate chips.
  • Ensure your eggs and butter are at room temperature for the best texture.
