1 pound breakfast sausage
1 cup chopped onion
1 cup chopped green bell pepper
8 large eggs
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
4 cups cubed day-old bread
2 cups shredded cheddar cheese
Instructions
In a large skillet, cook the breakfast sausage over medium heat until browned. Drain off excess grease. Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5-7 minutes. Remove from heat.
In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
Add the cubed bread and the sausage mixture to the egg mixture. Stir gently to combine.
Fold in the shredded cheddar cheese.
Pour the mixture into a greased 9×13 inch baking dish.
Cover and refrigerate overnight, or for at least 4 hours.
Preheat your oven to 350°F (175°C).
Bake uncovered for 40-50 minutes, or until the casserole is set and golden brown.
Let stand for 5-10 minutes before serving.
