A quick and creamy broccoli cheddar soup, perfect for a weeknight meal. This recipe focuses on achieving a smooth texture and rich flavor.

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion (about 1 medium)
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (fresh or frozen)
  • 4 cups chicken or vegetable broth
  • 2 cups milk (whole or 2%)
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  2. Add broccoli florets and broth to the pot. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until broccoli is tender.
  3. While the broccoli simmers, whisk together milk and flour in a medium bowl until smooth. This creates your roux base.
  4. Carefully transfer about half of the broccoli and broth mixture to a blender (or use an immersion blender directly in the pot). Blend until smooth. Return the pureed mixture to the pot.
  5. Stir in the salt, pepper, and nutmeg. Bring the soup to a gentle simmer.
  6. Gradually add the shredded cheeses to the simmering soup, stirring constantly until melted and smooth. Do not boil after adding cheese, as this can cause it to separate.
  7. Serve hot.

Notes

  • For a smoother soup, ensure your roux (milk and flour mixture) is fully incorporated before adding it to the hot liquid.
  • If using frozen broccoli, you can add it directly to the simmering broth.
  • This soup reheats well. Gently warm it on the stovetop over low heat, stirring frequently. Avoid boiling.
  • To freeze, cool the soup completely, then store in airtight containers. Thaw in the refrigerator and reheat as directed above.
