Make this simple, comforting casserole that combines fluffy rice, tender broccoli, and a rich cheddar cheese sauce. It is a perfect, easy side dish for weeknight dinners or family gatherings.

  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 3 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 2 cups fresh or frozen broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk (whole or 2%)
  • 2 tablespoons all-purpose flour
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the uncooked rice, salt, pepper, and Italian seasoning. Cook for 2 minutes, stirring constantly, to toast the rice slightly.
  4. Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer for 15 minutes. Do not lift the lid during this time.
  5. Remove the skillet from the heat. Stir in the broccoli florets. Cover the skillet again and let it stand for 5 minutes to allow the residual heat to steam the broccoli.
  6. While the rice rests, whisk together the milk and flour in a small bowl until smooth.
  7. Uncover the skillet. Stir in the milk mixture, shredded cheddar cheese, and Parmesan cheese until the cheese melts and the sauce thickens slightly.
  8. Serve the broccoli rice casserole hot directly from the pot.
