  • 1 cup all-purpose flour
  • 1 cup milk (dairy or non-dairy)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1/2 teaspoon black pepper
  • 1 cup buffalo wing sauce
  • 2 tablespoons melted butter (optional, for extra richness)
  • Ranch or blue cheese dressing, for serving
  • Celery sticks, for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, milk, garlic powder, onion powder, salt, and pepper to create a batter.
  3. Add the cauliflower florets to the batter and toss until evenly coated.
  4. Arrange the coated cauliflower on the prepared baking sheet in a single layer.
  5. Bake for 20-25 minutes, flipping halfway through, until the cauliflower is tender and the coating is golden brown and crispy.
  6. While the cauliflower bakes, gently warm the buffalo wing sauce in a small saucepan over low heat. If using, stir in the melted butter.
  7. Once the cauliflower is baked, transfer it to a clean bowl. Pour the warm buffalo sauce over the cauliflower and toss gently to coat.
  8. Return the sauced cauliflower to the baking sheet and bake for another 5-10 minutes, or until the sauce is slightly caramelized.
  9. Serve immediately with ranch or blue cheese dressing and celery sticks.

Notes

  • For a gluten-free version, substitute gluten-free all-purpose flour for the regular flour.
  • To make the cauliflower extra crispy, ensure the florets are dry before battering and do not overcrowd the baking sheet. You may need to bake in batches.
  • For an air fryer version, cook at 375°F (190°C) for 12-15 minutes, shaking the basket halfway through.
