Make your weeknight dinner exciting with this bold Buffalo chicken meatloaf recipe. It uses ground chicken and is topped with a zesty blue cheese glaze for a comforting yet spicy meal.

  • 1.5 lb ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Buffalo sauce (divided)
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup crumbled blue cheese
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan.
  2. In a small bowl, combine the panko breadcrumbs and milk. Let stand for 5 minutes to soak.
  3. In a large bowl, gently combine the ground chicken, soaked breadcrumbs, egg, onion, garlic, salt, and pepper. Do not overmix.
  4. In a separate small bowl, mix 1/4 cup of the Buffalo sauce with the Worcestershire sauce.
  5. Form the chicken mixture into a loaf shape and place it in the prepared loaf pan. Spread the mixed Buffalo sauce evenly over the top of the loaf.
  6. Bake for 45 minutes.
  7. While the meatloaf bakes, prepare the glaze: In a small saucepan over low heat, melt the butter. Whisk in the remaining 1/4 cup of Buffalo sauce and the crumbled blue cheese until smooth. Stir until the cheese is mostly melted.
  8. After 45 minutes, remove the meatloaf from the oven and pour the blue cheese glaze over the top.
  9. Return the meatloaf to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C).
  10. Let the spicy chicken meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For an extra kick, add 1 teaspoon of cayenne pepper to the meat mixture before forming the loaf.
  • If you prefer a crispier top, you can briefly place the meatloaf under the broiler for the last 2 minutes after adding the glaze, watching carefully to prevent burning.
  • Serve this easy meatloaf variation with celery sticks and ranch dressing for dipping.
