1 pound smoked sausage or Andouille sausage, sliced

1 medium onion, chopped
1 green bell pepper, chopped

1 teaspoon dried Italian seasoning
1/2 teaspoon onion powder
1/4 teaspoon black pepper
3 cups chicken broth
12 ounces dry pasta (penne or rotini work well)
1 (14.5 ounce) can diced tomatoes, undrained
8 ounces cream cheese, cut into cubes
1/2 cup heavy cream
1/2 cup grated Parmesan cheese

Instructions
Place the sliced sausage in a large pot or Dutch oven over medium-high heat. Cook until the sausage is browned on both sides, about 5 to 7 minutes. Remove the sausage with a slotted spoon and set it aside, leaving about 1 tablespoon of rendered fat in the pot.
Add the olive oil to the pot if needed. Add the chopped onion, bell pepper, and mushrooms. Cook, stirring occasionally, until the vegetables soften, about 5 minutes.
Add the minced garlic, Cajun seasoning, Italian seasoning, onion powder, and black pepper. Cook for 1 minute until fragrant.
Pour in the chicken broth and add the undrained diced tomatoes. Bring the mixture to a simmer.
Add the dry pasta to the pot. Stir well to prevent sticking. Return the mixture to a gentle simmer, then cover the pot, reduce the heat to medium-low, and cook for 10 to 12 minutes, or until the pasta is nearly tender. Stir occasionally during this time.
Stir in the cubed cream cheese until it melts completely into the sauce.
Stir in the heavy cream and the cooked sausage. Continue to cook for 2 to 3 minutes until the sauce thickens slightly and the sausage is heated through.
Remove the pot from the heat. Stir in the Parmesan cheese until smooth.

Notes
For a spicier kick, use a spicier Andouille sausage or add 1/4 teaspoon of cayenne pepper with the other seasonings.
