One-Pan Caprese Chicken

A quick and easy skillet chicken dish topped with mozzarella, tomatoes, basil, and balsamic glaze. Perfect for a weeknight dinner.

  • 1.5 lbs boneless, skinless chicken breasts, pounded to 1/2-inch thickness
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup store-bought pesto
  • 4 oz fresh mozzarella, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup balsamic glaze
  • Fresh basil leaves, for garnish

Instructions

  1. Season chicken breasts with oregano, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 3-4 minutes per side until golden brown.
  4. Reduce heat to medium. Spread pesto over the chicken.
  5. Top each chicken breast with mozzarella slices and halved cherry tomatoes.
  6. Cover the skillet and cook for 5-7 minutes, or until chicken is cooked through and cheese is melted.
  7. Drizzle with balsamic glaze and garnish with fresh basil before serving.

Notes

  • For best melting, use fresh mozzarella.
  • Add balsamic glaze at the end to prevent burning.
  • Serve with pasta or a side salad.
