  • 3/4 cup unsweetened cocoa powder

  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot water or coffee
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/4 cup milk or heavy cream
  • Black, dark blue, and purple gel food coloring
  • Edible silver or gold glitter dust
  • Edible star sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt for the cake layers.
  3. Add the eggs, buttermilk, oil, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for two minutes.
  4. Carefully stir in the hot water or coffee until the batter is smooth. The batter will be thin.
  5. Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  7. Prepare the buttercream: Beat the softened butter until creamy. Gradually add the powdered sugar, mixing until combined. Add vanilla and milk/cream, beating until light and fluffy.
  8. Divide the buttercream into three bowls. Leave one white. Color the second bowl dark blue and the third bowl purple.
  9. Once cakes are cool, level the tops if necessary. Place one cake layer on a serving plate. Spread a thin layer of white buttercream on top. Top with the second cake layer.
  10. Apply a thin crumb coat of white buttercream over the entire cake and chill for 20 minutes.
  11. Apply a final, thicker layer of white buttercream to the cake.
  12. To create the galaxy effect, randomly dab patches of the dark blue and purple buttercream onto the white frosting. Use an offset spatula or bench scraper to smooth the sides and top, blending the colors slightly to create a marbled, cosmic look.
  13. Before the frosting sets, lightly dust the cake with edible silver or gold glitter dust to mimic stars. Place edible star sprinkles strategically.
  14. Use a small, clean paintbrush dipped in edible silver paint to flick small dots onto the cake for a dense star field effect.
  15. Chill the cake until ready to serve.
