2 tablespoons unsalted butter
1/4 cup heavy cream or milk
1/4 cup grated Parmesan cheese (optional)

Instructions
Steam or boil the cauliflower florets until very tender, about 15-20 minutes.
Drain the cauliflower thoroughly. For a smoother mash and to remove excess water, you can press the cauliflower through a sieve or wrap it in cheesecloth and squeeze out as much liquid as possible.
Transfer the drained cauliflower to a food processor or blender.
Add butter, heavy cream (or milk), Parmesan cheese (if using), and roasted garlic (if using).
Process until smooth and creamy. Scrape down the sides as needed.
Season generously with salt and black pepper to your taste.
Serve hot.
