Ingredients
Scale
4 cups celery stalks, thinly sliced
1/2 cup walnuts, roughly chopped
1/2 cup pitted Medjool dates, chopped
1/4 cup fresh parsley, chopped
2 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Prepare the celery by washing the stalks and slicing them thinly across the grain. Place the sliced celery in a large mixing bowl.
Add the chopped walnuts, chopped dates, and fresh parsley to the bowl with the celery.
In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to create the dressing.
Pour the dressing over the salad ingredients.
Toss everything gently until the celery, walnuts, and dates are evenly coated.
Serve the celery salad immediately for maximum crunch, or chill for 15 minutes to allow the flavors to meld.
Notes
For an added layer of flavor, toast the walnuts lightly in a dry skillet over medium heat for 3-5 minutes before chopping and adding them to the salad.
If you enjoy a tangier flavor, add 1 tablespoon of crumbled feta cheese to the final mix.
This salad works well as a healthy celery appetizer or a midday snack salad.
