Ingredients

Scale
  • 3 cups cooked, shredded chicken (use rotisserie chicken for speed)
  • 2 cups cooked white rice
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 (10 ounce) package frozen broccoli florets, thawed and drained well
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup crushed butter crackers (optional topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, mayonnaise, and sour cream. Mix until smooth.
  3. Stir in the onion powder, garlic powder, pepper, and salt into the soup mixture.
  4. Add the shredded chicken, cooked rice, thawed broccoli, and 1 1/2 cups of the shredded cheddar cheese to the bowl. Mix gently until all ingredients are evenly coated in the sauce.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole. If using, sprinkle the crushed butter crackers evenly over the cheese layer.
  7. Bake for 25 to 30 minutes, or until the casserole is bubbly throughout and the topping is golden brown.
  8. Let the casserole rest for 5 minutes before you serve it.

Notes

  • For make-ahead convenience, assemble the entire casserole, cover it tightly, and refrigerate for up to 24 hours before baking. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
