  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 cup water chestnuts, finely chopped
  • 2 green onions, thinly sliced
  • 1/4 cup chopped peanuts (optional)
  • Butter lettuce or iceberg lettuce cups

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  3. Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
  4. In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, and sesame oil.
  5. Pour the sauce mixture over the chicken. Add chopped water chestnuts and stir to combine.
  6. Cook for 2-3 minutes, or until the sauce has thickened slightly.
  7. Stir in the sliced green onions and chopped peanuts (if using).
  8. Spoon the chicken mixture into lettuce cups and serve immediately.

  • For a gluten-free option, ensure your hoisin sauce is gluten-free.
  • Butter lettuce is recommended for its cup-like shape and tender texture, but iceberg lettuce also works well for a crispier bite.
