Ingredients
Scale
1 tablespoon vegetable oil
1 pound ground chicken
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 cup water chestnuts, finely chopped
2 green onions, thinly sliced
1/4 cup chopped peanuts (optional)
Butter lettuce or iceberg lettuce cups
Instructions
Heat vegetable oil in a large skillet over medium-high heat.
Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess grease.
Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, and sesame oil.
Pour the sauce mixture over the chicken. Add chopped water chestnuts and stir to combine.
Cook for 2-3 minutes, or until the sauce has thickened slightly.
Stir in the sliced green onions and chopped peanuts (if using).
Spoon the chicken mixture into lettuce cups and serve immediately.
Notes
For a gluten-free option, ensure your hoisin sauce is gluten-free.
Butter lettuce is recommended for its cup-like shape and tender texture, but iceberg lettuce also works well for a crispier bite.
The filling can be made ahead and reheated. Gently warm it on the stovetop or in the microwave before serving.
This recipe is a great option for meal planning and can be part of a low-carb diet.
