A weeknight-friendly, comfort classic Chicken Parmesan recipe that delivers crispy breaded chicken cutlets topped with marinara sauce and melted cheese.

  • 2 boneless, skinless chicken breasts, cut in half horizontally to make 4 cutlets
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil, plus more for frying
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese, salt, and pepper.
  3. Dredge each chicken cutlet first in flour, shaking off excess. Then dip in the beaten eggs, letting excess drip off. Finally, coat thoroughly with the breadcrumb mixture.
  4. Heat about 1/4 inch of olive oil in a large skillet over medium-high heat.
  5. Fry the breaded chicken cutlets for 2-3 minutes per side, until golden brown and crispy. You may need to do this in batches.
  6. Transfer the fried chicken cutlets to a baking dish.
  7. Spoon marinara sauce over each chicken cutlet.
  8. Top with shredded mozzarella cheese.
  9. Bake for 10-15 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
  10. Garnish with fresh basil leaves, if desired.

  • For a quicker meal, use your favorite store-bought marinara sauce.
  • Ensure your skillet is hot enough before adding the chicken to achieve a crispy coating.
  • This dish pairs well with spaghetti or a side salad.
