1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 tablespoon vegetable oil
1/2 cup low sodium soy sauce
1/4 cup water
1/4 cup brown sugar, packed
2 tablespoons mirin (or substitute with 1 tablespoon sugar and 1 tablespoon water)
1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
Optional: Sesame seeds and sliced green onions for garnish
Instructions
In a small bowl, whisk together the soy sauce, water, brown sugar, mirin, rice vinegar, minced garlic, and grated ginger. Set the sauce aside.
Heat the vegetable oil in a large skillet or pan over medium-high heat.
Add the cut chicken pieces to the hot skillet in a single layer. Cook for 5 to 7 minutes, turning occasionally, until the chicken is browned on all sides and cooked through. Remove the chicken from the skillet and set it aside on a plate.
Pour the prepared teriyaki sauce mixture into the same skillet. Bring the sauce to a simmer over medium heat, stirring constantly.
Once simmering, whisk the cornstarch slurry one more time and pour it slowly into the simmering sauce. Continue to cook, stirring, until the sauce thickens enough to coat the back of a spoon, about 1 to 2 minutes.
Return the cooked chicken to the skillet. Toss the chicken pieces gently to coat them completely in the thickened teriyaki glaze. Cook for 1 minute to heat through.
Serve immediately over steamed rice, garnished with sesame seeds and green onions if desired.
