Ingredients
Scale
4 slices sturdy bread (like Texas toast or sourdough)
4 tablespoons unsalted butter, divided
1/4 cup all-purpose flour
1 1/2 cups whole milk
4 ounces dried chipped beef, thinly sliced or chopped
1/4 teaspoon black pepper
Pinch of salt (taste first, as beef is salty)
Optional: Dash of Worcestershire sauce
Optional: Pinch of nutmeg
Instructions
Toast the bread slices until golden brown. Spread 1 tablespoon of butter evenly over the four slices of toast and set aside.
In a medium saucepan, melt the remaining 3 tablespoons of butter over medium heat.
Whisk in the flour to create a roux. Cook, stirring constantly, for 1 minute. Do not let it brown.
Gradually whisk in the milk until the mixture is smooth. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes. This is your white gravy base.
Add the chopped chipped beef to the gravy. Stir to combine. If the gravy becomes too thick, add a splash more milk.
Season the mixture with black pepper and a small pinch of salt if needed. Add optional Worcestershire sauce or nutmeg now. Heat through for 1 minute.
Spoon the creamed chipped beef mixture generously over the buttered toast slices. Serve immediately.
Notes
For a richer flavor, use half-and-half instead of all milk.

You can serve this over biscuits instead of toast for a variation often called S.O.S.
