Create luxurious homemade chocolate truffles with this simple recipe. These rich, melt-in-your-mouth confections are perfect for gifting or special occasions.

Ingredients

  • 8 ounces good quality semi-sweet or dark chocolate, finely chopped
  • 1 cup heavy cream
  • 1 tablespoon unsalted butter, softened
  • 1/4 cup unsweetened cocoa powder, for dusting

Instructions

  1. Place the finely chopped chocolate in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer around the edges. Do not boil.
  3. Pour the hot cream over the chopped chocolate. Let it sit for 5 minutes without stirring.
  4. Gently whisk the mixture until smooth and fully combined, creating a ganache.
  5. Whisk in the softened butter until incorporated.
  6. Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming.
  7. Chill the ganache in the refrigerator for at least 2 hours, or until firm enough to scoop.
  8. Line a baking sheet with parchment paper.
  9. Use a small spoon or a melon baller to scoop portions of the chilled ganache.
  10. Roll each portion into a ball between your palms. If the ganache becomes too soft, return it to the refrigerator to firm up.
  11. Place the rolled truffles on the prepared baking sheet.
  12. Pour the cocoa powder into a shallow dish.
  13. Gently roll each truffle in the cocoa powder until evenly coated.
  14. Place the finished truffles in an airtight container and store in the refrigerator for up to 1 week. Allow them to come to room temperature for about 15-20 minutes before serving for the best texture.

Notes

  • For a richer flavor, use chocolate with at least 60% cacao content.
  • You can add flavorings like 1-2 tablespoons of your favorite liqueur (rum, orange liqueur, or coffee liqueur) to the ganache after it’s smooth.
  • Experiment with rolling your truffles in finely chopped nuts, shredded coconut, or sprinkles for different textures and flavors.
  • If your hands get too sticky while rolling, you can chill them under cold water and dry them thoroughly before continuing.
