Make these simple, colorful cream cheese Christmas Jello Balls for a festive, no-bake holiday dessert that everyone will enjoy.

Ingredients

Scale
  • 1 package (3 oz) lime flavored gelatin
  • 1 package (3 oz) strawberry flavored gelatin
  • 1 package (3 oz) orange flavored gelatin
  • 2 cups boiling water (divided)
  • 1 cup cold water (divided)
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Sweetened condensed milk, for coating
  • Colored sanding sugar or shredded coconut, for coating

Instructions

  1. Prepare the gelatin: In three separate bowls, dissolve one package of gelatin in 2/3 cup of boiling water. Stir until fully dissolved. Add 1/3 cup of cold water to each bowl. Chill in the refrigerator until the gelatin is set but still soft (about 1 to 1.5 hours).
  2. Make the cream cheese mixture: In a large bowl, beat the softened cream cheese and granulated sugar until smooth. Beat in the vanilla extract.
  3. Combine: Once the gelatin is soft, use a fork to break it up slightly. Gently fold the lime gelatin mixture into the cream cheese mixture. Mix until just combined. Repeat this process separately for the strawberry and orange gelatin mixtures in two other bowls. Do not overmix.
  4. Chill again: Cover the bowls and chill the mixtures for at least 2 hours, or until firm enough to scoop.
  5. Shape the balls: Line a baking sheet with parchment paper. Scoop the chilled mixtures using a small cookie scoop or spoon. Roll the mixture between your palms into uniform balls. Return the balls to the refrigerator for 30 minutes to firm up before coating.
  6. Coat the balls: Pour the sweetened condensed milk into a shallow dish. Pour the sanding sugar or coconut into another shallow dish. Dip each chilled Jello ball first into the condensed milk, letting excess drip off, then roll immediately in the colored sugar or coconut until fully coated.
  7. Serve or store: Place the finished Christmas Jello Balls on a serving platter. Keep refrigerated until ready to serve.

Notes

  • For a firmer ball, chill the gelatin completely before mixing it with the cream cheese base.
  • You can substitute cream cheese with softened white chocolate for a different texture.
  • Use different colored gelatins like berry blue or raspberry for a wider holiday palette.
  • If the mixture sticks to your hands while rolling, chill it longer or lightly dampen your hands with cold water.
