  • 1/2 cup Christmas sprinkles (red, green, and white jimmies or nonpareils)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until just combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Gently fold in the Christmas sprinkles.
  6. Form the dough into a ball, flatten slightly into a disk, wrap it, and chill for at least 30 minutes if the dough feels too soft. (This dough is designed to be low-chill or no-roll for ease.)
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Scoop rounded tablespoons of dough and roll them into balls. Place them 2 inches apart on the prepared baking sheets.
  9. Gently press down on each ball with the bottom of a glass or your palm to flatten slightly into a cookie shape.
  10. Bake for 9 to 11 minutes, or until the edges are set but the centers remain soft.
  11. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
