1 cup long-grain white rice (like Basmati or Jasmine)
1 3/4 cups water or low-sodium chicken broth
1 tablespoon vegetable oil
1 teaspoon salt
1/2 cup fresh cilantro, finely chopped
2 tablespoons fresh lime juice
1 teaspoon lime zest
Instructions
Rinse the rice under cold water in a fine-mesh sieve until the water runs clear. Drain well.
In a medium saucepan, combine the rinsed rice, water or broth, vegetable oil, and salt.
Bring the mixture to a boil over medium-high heat.
Once boiling, immediately reduce the heat to the lowest setting, cover the saucepan tightly with a lid, and simmer for 15 minutes without lifting the lid.
Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes. Do not lift the lid during this resting period.
Remove the lid. Fluff the rice gently with a fork.
Add the chopped fresh cilantro, lime juice, and lime zest to the rice. Gently fold the ingredients together until evenly distributed.
