  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the grain: Combine the farro or barley with water or broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer until the grain is tender (about 25-35 minutes for farro, 40-50 minutes for barley). Drain any excess liquid and stir in the olive oil. Let cool completely.
  2. Prepare the vegetables: While the grain cools, thinly slice the celery and finely chop the red onion. Chop the fresh parsley.
  3. Make the dressing: In a small bowl, whisk together the mayonnaise, white wine vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
  4. Combine ingredients: In a large bowl, mix the cooled grain, sliced celery, red onion, parsley, sunflower seeds, and pumpkin seeds.
  5. Dress the salad: Pour the dressing over the grain mixture. Toss gently until everything is evenly coated.
  6. Chill: Cover the salad and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. This makes it a great make ahead grain salad.
