Make this creamy, cheesy cottage cheese queso dip in just five minutes. It is a high-protein, healthy alternative to traditional queso, perfect for snacking or topping tacos and nachos.

  • 1 cup full-fat cottage cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup salsa (drained, if very watery)
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Pinch of salt
  • Optional: 1 tablespoon diced jalapeño (for spice)

Instructions

  1. Place the cottage cheese, shredded cheddar cheese, salsa, chili powder, cumin, and salt into a small, high-powered blender or food processor.
  2. Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed. This should take about 1 to 2 minutes.
  3. Transfer the blended mixture to a microwave-safe bowl.
  4. Microwave on high for 30 to 60 seconds, stirring halfway through, until the dip is hot and the cheese is fully melted and incorporated.
  5. Taste and adjust seasonings if necessary. If the dip is too thick, add a teaspoon of water or milk until you reach your desired consistency.
  6. Serve immediately with tortilla chips, vegetable sticks, or as a topping for your favorite meals.

Notes

  • For the creamiest texture, use a high-powered blender. If you only have a standard blender, you may need to blend longer or heat the mixture slightly before blending.
  • This dip is excellent served warm, but it also works well cold as a spread.
  • To make this a low carb snack, serve with bell pepper strips or celery instead of chips.
  • If you want a richer flavor, substitute half the cottage cheese with plain Greek yogurt.
