  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, diced (optional, add just before serving)

Instructions

  1. Prepare the vegetables: Dice the red and green bell peppers, halve the cherry tomatoes, and finely dice the red onion. Chop the cilantro. If using frozen corn, thaw it completely.
  2. Combine the main ingredients: In a large bowl, mix together the rinsed black-eyed peas, black beans, thawed corn, diced bell peppers, halved tomatoes, diced red onion, and chopped cilantro.
  3. Make the zesty lime dressing: In a small bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar, ground cumin, chili powder, salt, and black pepper until well combined.
  4. Dress the caviar: Pour the dressing over the bean and vegetable mixture. Gently toss everything together until all ingredients are evenly coated.
  5. Chill (optional): Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step makes it a great make-ahead dip.
