Easy Cranberry Brie Bites

Make these simple, elegant cranberry brie bites using puff pastry for a perfect holiday appetizer.

  • 1 package (14.1 ounces) refrigerated puff pastry sheets
  • 8 ounces brie cheese, cut into small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon water
  • Optional: chopped pecans for topping

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a mini muffin pan.
  2. Unroll the puff pastry sheets on a lightly floured surface. Use a 2-inch round cookie cutter to cut out circles from the pastry. You should get about 24 circles per sheet.
  3. Gently press each pastry circle into the cups of the mini muffin pan.
  4. Place a small cube of brie cheese into the bottom of each pastry cup.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce. If using pecans, sprinkle a few on top of the sauce.
  6. In a small bowl, whisk together the beaten egg and water to create an egg wash. Lightly brush the edges of the pastry with the egg wash.
  7. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed.
  8. Let the bites cool in the pan for 5 minutes before carefully removing them to a wire rack to cool slightly before serving.

Notes

  • For a different base, substitute the puff pastry with phyllo shells if you prefer a crispier cup.
  • If you are planning your week and looking at meal planning options, these bites are quick enough to fit into any busy schedule.
  • You can prepare the brie and cranberry filling ahead of time, but assemble and bake just before serving for the best texture.
