Make bakery-quality cranberry orange scones at home. This easy recipe creates tender, flaky scones bursting with fresh orange zest and juicy cranberries, finished with a bright citrus glaze.

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1 cup heavy cream, very cold
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries
  • Zest of 1 large orange
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon fresh orange juice (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into the dry ingredients using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. This helps create flaky layers.
  4. In a small bowl, whisk together the cold heavy cream, beaten egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Mix gently with a fork until just combined. Do not overmix; the dough will look shaggy.
  6. Gently fold in the cranberries and orange zest. If using frozen cranberries, do not thaw them first.
  7. Turn the dough out onto a lightly floured surface. Gently pat the dough into a 1-inch thick circle or rectangle.
  8. Cut the dough into 8 equal wedges or use a round cutter for traditional shapes. Place the scones on the prepared baking sheet, leaving about 1 inch between them.
  9. Bake for 15 to 18 minutes, or until the tops are lightly golden brown.
  10. While the scones cool slightly, prepare the glaze. Whisk together the powdered sugar and orange juice until smooth. Add more juice, a drop at a time, if the glaze is too thick.
  11. Drizzle the orange glaze over the warm scones. Let the glaze set before serving.

  • For the best flaky texture, keep your butter and cream very cold before mixing.
  • If you are using frozen cranberries, toss them with one teaspoon of flour before adding them to the dough; this helps prevent them from sinking.
  • You can make these scones ahead of time. Store cooled, unglazed scones in an airtight container for up to 2 days, or freeze them for up to 3 months. Glaze just before serving.
