1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 cup egg noodles
1/2 cup heavy cream
1/4 cup all-purpose flour (optional, for thickening)

1/4 cup fresh parsley, chopped
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
Add the minced garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
Pour in the chicken broth. Bring the mixture to a simmer.
If you prefer a thicker soup, whisk the flour into 1/2 cup of cold water until smooth. Slowly whisk this slurry into the simmering broth. Continue to simmer until the broth thickens slightly.
Add the shredded cooked chicken and the egg noodles to the pot. Cook according to the noodle package directions, usually 6 to 8 minutes, until the noodles are tender.
Reduce the heat to low. Stir in the heavy cream. Heat through gently, but do not allow the soup to boil after adding the cream.
Season generously with salt and pepper to your taste.
