12 oz pasta (spaghetti or linguine)
1 tablespoon olive oil
1 tablespoon butter
1 pound cremini mushrooms, sliced
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup dry white wine or vegetable broth
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
2 cups fresh spinach (optional)

Instructions
Cook the pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining.
While the pasta cooks, heat the olive oil and butter in a large skillet over medium-high heat.
Add the sliced mushrooms to the skillet and cook without stirring for 3-4 minutes to allow them to brown. Stir and continue cooking until the mushrooms release their liquid and turn golden brown, about 5-7 more minutes.
Add the minced garlic, salt, and pepper to the skillet. Cook for 1 minute until fragrant.
Pour in the white wine or broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer until the liquid reduces by half.
Reduce the heat to medium-low. Stir in the heavy cream and bring the sauce to a gentle simmer.
Stir in the Parmesan cheese until the sauce is smooth. If using spinach, add it now and cook until wilted.
Add the drained pasta to the skillet with the sauce. Toss to coat everything evenly. If the sauce is too thick, add the reserved pasta water, a splash at a time, until you reach your desired consistency.
Serve immediately. Top each serving with extra Parmesan cheese and fresh parsley.

For a lighter sauce, substitute half-and-half for the heavy cream, but the sauce will be less rich.
