Crockpot French Onion Meatloaf with Melted Swiss Cheese

Create a tender, juicy meatloaf with the rich, savory flavor of French onion soup using your slow cooker. This hands-off recipe is pure comfort food, topped with gooey, melted Swiss cheese.

  • 2 lbs ground beef
  • 1 packet (1.25 oz) dry onion soup mix (like Lipton)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 1/2 cup finely chopped onion (optional, for extra flavor)
  • 1/4 teaspoon black pepper
  • 1 (10.5 oz) can condensed French onion soup, undiluted
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, combine the ground beef, dry onion soup mix, breadcrumbs, milk, egg, and optional chopped onion and pepper. Mix gently with your hands until just combined; do not overmix.
  2. Shape the mixture into a loaf shape and place it in the basin of a 5-quart or 6-quart slow cooker.
  3. Pour the undiluted French onion soup evenly over the top of the meatloaf.
  4. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 2.5 to 3 hours, until the meatloaf is cooked through and tender.
  5. About 15 minutes before the cooking time ends, remove the lid and place the Swiss cheese slices evenly over the top of the meatloaf. Replace the lid until the cheese is fully melted and gooey.
  6. Carefully remove the meatloaf from the slow cooker using two large spatulas. Let it rest for 5 minutes before slicing. Serve with the pan juices spooned over the top.

Notes

  • For the juiciest meatloaf, avoid pressing the mixture too firmly when shaping it.
  • If you prefer a thicker sauce, remove the meatloaf after cooking, set the slow cooker to high, and let the remaining liquid reduce uncovered for 15-20 minutes.
  • This recipe works well with a mix of ground beef and ground pork for added flavor.
