Easy Slow Cooker Italian Chicken for Sandwiches or Pasta

Make tender, flavorful Italian chicken with minimal effort using your Crockpot. This recipe is perfect for shredding and using in sandwiches, over pasta, or on salads.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (15 oz) can tomato sauce
  • 1 (1 oz) packet dry Italian dressing mix
  • 1/2 cup water
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano

Instructions

  1. Place the chicken breasts or thighs into the bottom of your slow cooker.
  2. In a separate bowl, whisk together the tomato sauce, Italian dressing mix, water, Parmesan cheese, and oregano until combined.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  5. Remove the chicken from the slow cooker and shred it using two forks.
  6. Return the shredded chicken to the sauce in the slow cooker and stir to coat completely. Let it heat through for 10 minutes before serving.

Notes

  • For a richer flavor, substitute the water with dry red wine.
  • If you like a little heat, add 1/4 cup of sliced pepperoncini peppers along with the sauce ingredients.
  • Shredded chicken freezes well for future low effort italian chicken crockpot meals.
