Ingredients
Scale
2 lbs boneless, skinless chicken thighs or breasts
1 (10.5 ounce) can cream of chicken soup
1 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup sun-dried tomatoes, drained and chopped
1 tablespoon Italian seasoning
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons cornstarch (for thickening)
2 tablespoons cold water (for slurry)
Fresh parsley, chopped (for garnish)
Instructions
Place the chicken thighs or breasts into the bottom of your slow cooker.
In a separate bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, minced garlic, salt, and pepper until smooth.
Pour the sauce mixture evenly over the chicken in the slow cooker.
Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is tender.
Remove the chicken from the slow cooker and shred it using two forks, or leave it whole if preferred. Return the chicken to the sauce.
In a small bowl, whisk together the cornstarch and cold water to create a slurry. Stir this slurry into the sauce in the slow cooker.
Cover and cook on HIGH for 10 to 15 minutes, or until the sauce thickens to your liking.
Serve the creamy Crockpot Marry Me Chicken immediately over pasta, rice, or mashed potatoes. Garnish with fresh parsley.
Notes
For the best flavor and texture, use chicken thighs instead of breasts in the slow cooker.
If you prefer a richer sauce, substitute half of the heavy cream with cream cheese.
This dish tastes wonderful served over egg noodles or alongside crusty bread to soak up the sauce.
