1 (12 ounce) bag milk chocolate chips
1 (12 ounce) bag semi-sweet chocolate chips
3 cups roasted, salted peanuts
Instructions
Lightly grease the inside of a small slow cooker (2-quart size works well).
Combine the milk chocolate chips and semi-sweet chocolate chips in the slow cooker.
Place the lid on the slow cooker and let the chocolate melt on LOW for about 1 hour, stirring every 15-20 minutes until smooth. Do not let the chocolate scorch.
Once the chocolate is fully melted and smooth, stir in the roasted, salted peanuts until they are completely coated.
Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. You can make them any size you prefer.
Let the clusters set at room temperature for several hours, or place them in the refrigerator for about 30 minutes to speed up the setting process.
Store the finished clusters in an airtight container.
Notes
For a variation, substitute 1 cup of the peanuts with pecans or another nut you prefer.
If you need these faster, you can melt the chocolate using a microwave in 30-second intervals, stirring well between each interval, before mixing in the peanuts. This avoids the slow cooker time.
