2 large cucumbers, diced
4 stalks celery, thinly sliced
1/4 cup red onion, thinly sliced
2 tablespoons fresh dill, chopped
1/4 cup olive oil
3 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Wash and prepare all vegetables. Dice the cucumbers, thinly slice the celery, and thinly slice the red onion. Place them in a large mixing bowl.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to make the vinaigrette.
Pour the dressing over the vegetables.
Add the chopped fresh dill to the bowl.
Gently toss all ingredients until the vegetables are evenly coated with the dressing.
Chill the salad for at least 15 minutes before serving to allow the flavors to combine.
Notes
To keep this salad extra crisp, salt the cucumbers lightly and let them sit in a colander for 10 minutes before rinsing and adding them to the salad. This draws out excess water.
