Create a comforting, cheesy Frito Pie Casserole that is perfect for a quick weeknight dinner or game day. This simple recipe layers seasoned ground beef chili with crunchy corn chips and melted cheddar cheese for a satisfying Tex-Mex favorite.

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • 1 (10 ounce) bag Frito corn chips, slightly crushed
  • 2 cups shredded cheddar cheese
  • For Toppings (Optional): Sour cream, salsa, sliced jalapeños, chopped green onions

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and onion until the beef is browned. Drain off any excess grease.
  3. Stir the taco seasoning, black beans, diced tomatoes with green chilies, tomato sauce, and water into the beef mixture. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Spread half of the Frito corn chips in an even layer across the bottom of the prepared baking dish.
  5. Spoon the beef and chili mixture evenly over the layer of Fritos.
  6. Sprinkle one cup of the shredded cheddar cheese over the chili layer.
  7. Top with the remaining half of the Fritos.
  8. Sprinkle the remaining one cup of cheddar cheese over the top layer of chips.
  9. Bake for 15 to 20 minutes, or until the cheese is fully melted and bubbly.
  10. Let the casserole rest for 5 minutes before serving. Offer optional toppings for everyone to customize their portion.

Notes

  • For a richer chili flavor, use half a packet of taco seasoning and add 1 teaspoon of chili powder and 1/2 teaspoon of cumin to the beef mixture.
  • If you prefer a less crunchy texture, reserve half of the Fritos to sprinkle on top right before serving instead of baking them with the casserole.
