Create a simple, flavorful appetizer that tastes like fresh bruschetta but in a creamy dip form. This layered dip uses three cheeses for a rich base topped with fresh tomatoes and basil, perfect for your next gathering.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 4 ounces Boursin cheese (or soft herbed cheese), room temperature
  • 4 ounces shredded mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Roma tomatoes, diced small
  • 1/2 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • 1 baguette, sliced and toasted (for serving)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit if you prefer a warm dip base, or skip this step for a cold dip.
  2. In a medium bowl, combine the softened cream cheese, Boursin cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until completely smooth and well combined.
  3. Spread the cheese mixture evenly into a shallow serving dish or pie plate. If baking, place in the preheated oven for 10 to 12 minutes, or until the cheese is warm and slightly melted around the edges. Let cool slightly if baked.
  4. In a separate small bowl, gently toss the diced tomatoes with the chopped fresh basil and olive oil.
  5. Spoon the fresh tomato and basil mixture evenly over the top of the cheese layer.
  6. Drizzle the balsamic glaze over the tomato topping just before serving.
  7. Serve the bruschetta dip immediately with toasted baguette slices or your favorite crackers.

Notes

  • For a make-ahead appetizer, prepare the cheese base and tomato topping separately. Store them covered in the refrigerator for up to one day. Assemble just before serving.
  • If you want a baked dip, let the cheese mixture sit at room temperature for 30 minutes before baking for the best texture.
  • Use high-quality, ripe tomatoes for the best flavor in the topping.
