Make this creamy, cheesy chicken cobbler casserole for a satisfying family dinner. It uses a simple biscuit topping inspired by Cheddar Bay flavors and comes together fast for busy weeknights.

  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of celery soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded sharp cheddar cheese, divided
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried parsley
  • 1 (16.3 ounce) can refrigerated biscuit dough (8 biscuits)
  • 1/4 cup melted butter
  • 1 teaspoon Old Bay seasoning (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, cream of celery soup, chicken broth, sour cream, frozen vegetables, 3/4 cup of the cheddar cheese, garlic powder, onion powder, and parsley. Mix until everything is well combined.
  3. Pour the chicken mixture evenly into the prepared baking dish.
  4. Arrange the refrigerated biscuit dough pieces on top of the chicken mixture. You can place them close together or slightly overlapping.
  5. In a small bowl, mix the melted butter with the Old Bay seasoning. Brush this mixture evenly over the tops of the biscuits.
  6. Bake for 20 to 25 minutes, or until the biscuits are golden brown and cooked through.
  7. Remove the dish from the oven and immediately sprinkle the remaining 1/4 cup of cheddar cheese over the hot biscuits. Let it sit for 5 minutes for the cheese to melt.
  8. Serve this hearty family meal warm.

Notes

  • For a Cheddar Bay flavor boost, add 1/2 teaspoon of dried dill and a pinch of cayenne pepper to the melted butter topping mixture.
  • If you do not have cream of celery soup, you can substitute it with another can of cream of chicken soup or cream of mushroom soup.
