Make this simple, cheesy Rotel Dip using Velveeta and Rotel tomatoes. This recipe works well in a slow cooker or on the stovetop and is perfect for parties or game days.

Ingredients

Scale
  • 1 (16 ounce) package Velveeta cheese, cut into cubes
  • 1 (10 ounce) can Rotel Original Diced Tomatoes and Green Chilies, undrained
  • 1 pound ground beef or sausage (optional)
  • 1 teaspoon taco seasoning (if using meat)
  • 1 (4 ounce) can diced green chilies (optional, for extra heat)
  • 1 (8 ounce) package cream cheese, cubed (optional variation)

Instructions

  1. If using ground beef or sausage, cook the meat in a skillet over medium heat until fully browned. Drain off any excess grease. Stir in taco seasoning, if using.
  2. For Stovetop Method: Combine Velveeta, Rotel (undrained), and cooked meat (if using) in a medium saucepan. Heat over low heat, stirring frequently until the cheese is completely melted and the dip is smooth and creamy.
  3. For Slow Cooker Method: Combine Velveeta, Rotel (undrained), and cooked meat (if using) in a small slow cooker. Cook on LOW for 1 to 2 hours, stirring occasionally until smooth.
  4. If using the cream cheese variation, add the cream cheese cubes along with the other ingredients and stir until fully incorporated and smooth.
  5. Serve the dip warm with tortilla chips, crackers, or vegetable sticks.

Notes

  • For a thicker dip, drain half the liquid from the can of Rotel before adding it to the mixture.
  • This dip is a great alternative to ordering from meal delivery companies when you need a quick snack.
  • If you are planning your party menu, this recipe pairs well with simple meal planning strategies for appetizers.
