  • 1 large yellow onion, chopped
  • 1 red bell pepper, chopped

  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 (15-ounce) can black beans, undrained
  • 1 (14.5-ounce) can fire-roasted diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1 lime, cut into wedges (for serving)
  • Optional Toppings: avocado, fresh cilantro, sour cream or plain Greek yogurt, tortilla chips

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper and cook until softened, about 5 to 7 minutes.
  2. Add the minced garlic, chili powder, cumin, smoked paprika, chipotle powder, and oregano. Cook for 1 minute, stirring constantly until fragrant.
  3. Add the rinsed black beans, the undrained black beans, fire-roasted tomatoes, vegetable broth, and bay leaf to the pot. Stir to combine.
  4. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15 minutes to allow the flavors to meld.
  5. Remove and discard the bay leaf. Use an immersion blender to blend about one-third of the soup until creamy, or carefully transfer 2 cups of soup to a regular blender, blend until smooth, and return it to the pot. This step thickens the soup.
  6. Stir in the salt and pepper. Taste and adjust seasonings as needed. If you prefer a thinner soup, add a little more broth.
